Despite porcelain fungus being listed as edible, and it being a prolific fruiter, most people are put off by the slime…

I find that if you destalk and wash the caps under running water, blot them as dry as you can on good quality kitchen roll, then fry them until slightly crispy around the edges (I tend to leave them alone in the pan as much as possible to keep their integrity as best I can), they’re tasty, nutty and good to eat.

But bung them in with others and cook together and you will indeed get a slimy sloppy mess haha! A nice seasonal treat for me.
